Post-harvest diseases not only affect the marketability of harvested grains, legumes, or produce, but they can also affect the quality and safety of products made from them. This peanut is infected by Aspergillus flavus, a fungus that is sporulating on it. A. flavus produces aflatoxin, a mycotoxic chemical that is a health concern to both humans and animals.
